It’s been a very exciting week for me!  If you happened to head over to my website, you may have noticed that my company name has changed (hope you guys love the new logo!)   I just wanted to let you know that is purely what it is a name change =)  I have thought about this for a long time and finally have decided to move forward with it.  I”m sure many of you are wondering why I changed it.  I’m a true believer of evolving and sometimes it’s time to let go of the old to make space for new and exciting things to come.  Although I love the name Le Chic, as my business evolved, more and more clients and industry friends know me and related to me more by my name.  Aside from that, the business is still the same, run and designed with love by your’s truly.

Candice Saucier is very organized, imaginative, and a sincere individual who cares deeply for the happiness of others. She is a creative individual who is passionate for the world of design and weddings. It has been a passion since she was young, and upon her graduation from the Design Institute of San Diego with a BFA, this solidified wedding coordination as her lifelong dream. She enjoys experimenting with color and with her quirky design style of modern elegance she tries to create new and innovative designs for her clientele.

Candice’s Tip:
One of the key elements in order to have a successful wedding is to experiment with color and style while making sure the design reflects both personalities of the bride and groom.

Here is what our “Month of” includes!

Chic Soiree “Month Of”

Designed to assist the bride and groom 1 month before their wedding date, at the rehearsal, and on the day of their wedding.  This is for organized couples who have done the planning on their own, but need assistance to wrap up all the details and to direct the wedding day.

*Pricing for up to 250 guests and maximum of 2 locations on the wedding day.

*Upon signing of contract vendor recommendations as requested

ONE MONTHS PRIOR:

-Provide client with advice and recommendation to tie up any items outstanding

Accompany clients to the final walk-through for the ceremony and reception site with the catering manager to review details of services, rentals, design, and floor plan

-  Obtain and review all vendor contracts and banquet event order to ensure items and services are accurate with what the client contracted.

-    Become a liaison between client and vendors

-   Provide etiquette advice as needed

-   Meeting face to face or via phone 1 month prior to wedding date to:

*  Gather information needed: Vendors contact, Wedding Party, Processional, Recessional, Décor etc.

*  Finalize ceremony details

*  Review progress and tie up loose ends

Create a detailed timeline based on the personal preferences of the clients for series of events

*Timeline will be emailed to clients to review for changes and to assist in coordinating with wedding party and participating family members

*Timeline to incorporate delivery set-up, pick-up schedule of all vendors ( Le Chic to distribute final timeline to necessary vendors and catering manager)

-  Confirmation of all vendors’ service

-  Unlimited phone and email communication during time of service contracted.

THE WEEK PRIOR:

Wrap up meeting with client one week prior to wedding to (face to face or via phone)

  • Review all event details
  • Finalize wedding timeline for any last minute changes
  • Obtain wedding items (guestbook, programs, table numbers, seating charges, cake cutter, toasting flutes, marriage license, wedding favors, and any additional items)  (can also be obtained at rehearsal)
  • Obtain final payments and or gratuities for vendors
  • Obtain final layout design for ceremony and reception
  • Obtain table assignments for guests, and entrée choices if applicable

REHEARSAL

  • Orchestrate the rehearsal at the ceremony location

WEDDING DAY (UP TO 10 HOURS OF COVERAGE)

-        At designated time, LCWC team will arrive at venue and stay through the end of the reception to ensure clean-up of reception meets the venues expectations to avoid any surprise cost to the clients

-        Includes one assistant (up to 150 guests)

-        Oversees set up of ceremony and reception

-        Sets up all wedding items, and assist other vendors in set-up and décor as needed

-        Keeping wedding party on schedule with the timeline

-        Delivery of personal flowers, and pinning of corsages and boutonnieres.

-        Ensure of wedding rings and marriage license are on hand prior to ceremony

-        Line-up of wedding party for ceremony and grand entrance, cue in DJ or musician.

-        Gather any items left from getting ready to be transported to designated hotel room or vehicle

-        Management through out ceremony and reception to ensure everything flows smoothly according to the timeline.

-        Distribute final payments and or gratuities to all vendors

-        Gather all items at the end of the night for transporting to designated hotel room, vehicle, or delivery to designated person

-        Assistant with bride and groom’s request that day

-        Emergency kit on hand

In Case you need to impress your “soon-to-be” In Laws by making a turkey! Here is my favorite turkey brine!  Brining is a MUST for a moist turkey!

(Recipe from epicurious)

Turkey:

  • 1 19- to 20-pound turkey; neck, heart and gizzard reserved for gravy
  • 8 quarts water
  • 2 cups coarse salt
  • 1 cup honey
  • 2 bunches fresh thyme
  • 8 large garlic cloves, peeled
  • 2 tablespoons coarsely cracked black pepper
  • 2 lemons, halved
  • 2 tablespoons olive oil
  • 5 cups (about) canned low-salt chicken broth

Gravy:

  • Reserved turkey neck, heart and gizzard
  • 6 cups water
  • 3 1/2 cups canned low-salt chicken broth
  • 2 carrots, coarsely chopped
  • 1 onion, halved
  • 1 large celery stalk, chopped
  • 1 small bay leaf
  • 5 tablespoons butter
  • 5 tablespoons all purpose flour
  • 1/4 cup whipping cream


Preparation

For turkey:
Line extra-large stockpot with heavy large plastic bag (about 30-gallon capacity). Rinse turkey; place in plastic bag. Stir 8 quarts water, 2 cups coarse salt and 1 cup honey in large pot until salt and honey dissolve. Add 1 bunch fresh thyme, peeled garlic cloves and black pepper. Pour brine over turkey. Gather plastic bag tightly around turkey so that bird is covered with brine; seal plastic bag. Refrigerate pot with turkey in brine at least 12 hours and up to 18 hours.

Position rack in bottom third of oven and preheat to 350°F. Drain turkey well; discard brine. Pat turkey dry inside and out. Squeeze juice from lemon halves into main cavity. Add lemon rinds and remaining 1 bunch fresh thyme to main cavity. Tuck wings under turkey; tie legs together loosely to hold shape. Place turkey on rack set in large roasting pan. Rub turkey all over with 2 tablespoons olive oil.

Roast turkey 1 hour. Baste turkey with 1 cup chicken broth. Continue to roast until turkey is deep brown and thermometer inserted into thickest part of thigh registers 180°F, basting with 1 cup chicken broth every 30 minutes and covering loosely with foil if turkey is browning too quickly, about 2 1/2 hours longer. Transfer turkey to platter. Tent turkey loosely with foil and let stand 30 minutes. Pour pan juices into large glass measuring cup. Spoon off fat; reserve juices.

For gravy:
While turkey cooks, place reserved turkey neck, heart and gizzard into large saucepan. Add 6 cups water, 3 1/2 cups chicken broth, carrots, onion, celery and bay leaf. Simmer over medium heat until turkey stock is reduced to 3 cups, about 2 hours. Strain turkey stock into bowl; reserve turkey neck and giblets. Pull meat off neck. Chop neck meat and giblets.

Melt 5 tablespoons butter in heavy large saucepan over medium heat. Add 5 tablespoons all purpose flour and whisk 2 minutes. Gradually whisk in turkey stock, cream and up to 1 cup reserved turkey pan juices (juices are salty, so add according to taste). Simmer gravy until thickened to desired consistency, whisking occasionally, about 5 minutes. Add chopped turkey neck meat and giblets; season to taste with pepper.

Serve turkey with gravy.

Hi Everyone,

I am so happy to announce that our Le Chic Wedding Boutique has been launched! I got the idea for the boutique because whenever I work with my brides they struggled to find a lot of unique wedding accessories . Then I would direct them to so many different places. On my search to hunt for fabulous and unique wedding items, I had the opportunity to get to know so many talented designers both near and far. Then it dawned on me that I would love to make it convenient for my brides and all brides to have the opportunity to shop online with a very boutique atmosphere. The boutique consists of many designers that pride themselves on their work and have designed the products themselves. None of our products are made in a factory and in fact many of them are made by hand. We also carry products made from recycled material. Janice and I have handpicked every item for you to enjoy, and I know this is just the beginning. So bookmark the boutique and come back and visit us from time to time. We will also carry a home accessories collection! We know that you are getting ready to start your new life together so stay tuned for fabulous home decor to come.
